    THE 6 STRANGEST VIENNESE COFFEE SPECIALTIES – WHITE MILKSKIN COFFEE

    For my series on remarkable and strange Viennese coffee specialties, each Monday I proudly present you one of the 6 finalists. Until now, the Kaisermelange and the Hangover Coffee were presented. The winner for the "Strangest Viennese Coffee Specialty" will then be elected by a couragous jury. Today I can present you something particularly strange: "Weißer mit Haut" - White Milkskin Coffee!

    Yes, rumors you've heard are true: there are people who love it if a skin forms on top of their cup of milk. To the ones who belong to this special kind of people: You are not alone. In Vienna, there is even a coffee specialty dedicated to milkskin. It is called "Weißer mit Haut" which can be translated with >>White One with Skin<< and consists of a bright coffee with hot milk, which is not foamed or stirred so that an extra skin is formed on top.

    1. For the preparation you need whole milk, not the ultra-light diet version that tastes like nothing. With the non-fat milk it will be in fact difficult to form a skin.
    2. Prepare your black coffee like usual.
    3. Then, heat the milk either on the stove or in the microwave. The milk must be very hot to form skin. To prevent it from burning, heating up in the microwave is the safer way. While heating up, the milk must not be stirred, so the skin can form on top.
    4. Mix the black coffee with your very hot milk (about half coffee half milk) in your cup.
    5. During my research I've also read that the milk with skin can be served separately to the coffee mug. (That is, one has a cup of milk coffee and an extra jug of milk with skin to pour into the cup).
