With this easy elderflower jelly recipe, you can beautifully preserve the delicate, floral aroma of elderflowers! Besides freshly picked elderflower heads, you'll need lemon, gelling sugar, water, and sterilized jam jars.

I've summarized more information about picking elderflowers in this article. If you're new to this, make sure to read up beforehand—elderflowers can easily be confused with other plants that are toxic. (In elder, the stems and raw berries are poisonous, but the flowers are safe.)

Ingredients
You’ll need the following ingredients:
- about 20–25 elderflower heads
- 1 liter water (about 4 ¼ cups)
- 500 grams gelling sugar 2:1 (about 2 ½ cups of gelling sugar or a special pectin + sugar mix designed for 2:1 ratios)
- 1 organic lemon, untreated
Instructions
Here’s a detailed step-by-step guide with images:
Step 1
Pluck the elderflowers from their stems. Wash the lemon thoroughly, dry it, and cut into slices. Place the elderflowers and lemon slices in a container, cover with the water, and let it steep for 24 hours in a cool place (fridge, cellar, or any cool room).
Step 2
Strain the mixture through a fine sieve or a sieve lined with a clean cloth. Squeeze out the flowers and lemon well to get as much of the aromatic liquid as possible.
Step 3
In a pot, combine the strained liquid with the gelling sugar. Bring to a boil and cook for 5 minutes, stirring regularly.
Plate test for gelling: Spoon a small amount of hot jelly onto a chilled plate. If it sets to the desired consistency, it's ready. If it's still too runny, boil a bit longer and repeat the test.
Step 4
Pour the hot jelly into sterilized jam jars, seal them immediately, and let cool.
