Zutaten
20elderflower heads
1literwaterabout 4 ¼ cups
500gramsgelling sugar 2:1about 2 ½ cups of gelling sugar or a special pectin + sugar mix designed for 2:1 ratios
1organic lemon
Anleitung
Pluck the elderflowers from their stems. Wash the lemon thoroughly, dry it, and cut into slices. Place the elderflowers and lemon slices in a container, cover with the water, and let it steep for 24 hours in a cool place (fridge, cellar, or any cool room).
Strain the mixture through a fine sieve or a sieve lined with a clean cloth. Squeeze out the flowers and lemon well to get as much of the aromatic liquid as possible.
In a pot, combine the strained liquid with the gelling sugar. Bring to a boil and cook for 5 minutes, stirring regularly.Gel test: Spoon a small amount of hot jelly onto a chilled plate. If it sets to the desired consistency, it's ready. If it's still too runny, boil a bit longer and repeat the gel test.
Pour the hot jelly into sterilized jam jars, seal them immediately, and let cool.
