Grenadiermarsch is an authentic traditional Austrian dish for using up leftovers. It is the perfect hearty home-style meal for using up leftover smoked meat, bread dumplings, potatoes, and noodles.
Historically, a grenadier was a soldier trained to throw grenades.The term Grenadiermarsch ("grenadier march") originates from military slang and probably owes its origins to the typical military leftover cuisine.

Of course, you can also prepare the ingredients fresh, but that's a lot of work. The easiest way to make Grenadiermarsch is to incorporate the necessary ingredients into your meal plan in the days leading up to it:
For example, you could have:
- bread dumplings (e.g. with chanterelle mushroom goulash) on Monday,
- some kind of pasta dish like Krautfleckerl or Schinkenfleckerl on Tuesday,
- something with boiled potatoes (like Austrian potato salad) on Wednesday,
- smoked meat on Thursday,
- and all the leftovers in Grenadiermarsch on Friday.


Grandma's Grenadiermarsch Recipe
Grenadier march is the perfect hearty home-cooked meal recipe for using up leftovers from the whole week.
Zutaten
- 1 onion
- 1 tablespoon oil
- 1 clove of garlic
- 100 g smoked meat or bacon cubes
- 2 bread dumplings ~200 g
- 2 boiled potatoes ~200 g
- 100 g short pasta like macaroni
- 1 teaspoon chives
- Pepper
- Salt
- 1 teaspoon marjoram optional
- 1 teaspoon caraway seeds optional
- 2 eggs optional
Anleitung
- Fry the finely chopped onion in oil until light brown.
- Add the crushed garlic and finely diced smoked meat.
- Add finely chopped bread dumplings, potatoes, and pasta.
- Season with salt, pepper, and optionally marjoram and caraway seeds.
- Fry in a pan until everything is slightly crispy.
- Optionally, crack eggs over the mixture and fry them as well.
- Serve sprinkled with chives.
