Pork Roast Drippings Spread

Besides of the crust, what's the best part of a pork roast? Exactly, the drippings!

Thus, this spread of pork roast drippings, served on dark bread with onions and greaves on top is one of the best things ever, believe me ;)!

I don't say you should eat that every day. Although I did that, to be honest, for the last few days. For breakfast ;).

Whenever I visit a Viennese Heuriger (wine tavern), I order a "Bratlfettn-Brot" (bread with pork drippings) and look forward to this perfect combination of pure fat, salt, spices and pork roast flavor and in this moments, I feel really thankful to that pork roast for it has done such a good job.

When you have the chance to visit a Heuriger in Vienna or other parts of Austria , you may try it out ;). Usually, you can top it with greaves and onion rings.

Instructions

First: you make pork roast, for example like this.

After the pork roast is cooked, you put aside some of the fat from the drippings. In the picture below, the fat ist already cooled down. When the gravy is still hot, you remove the grease drops swimming on top.

Fill the grease into a clean container and store in the fridge.

That's it!

The parts you put aside of the drippings should contain only little liquid and mostly fat, otherwise it will not become hard in the fridge.

Pork Roast Drippings

If you desire lots of gravy to serve with the roast AND lots of drippings, you may, after roasting is finished, take aside the fatty parts of the dripping, and add some more water or soup to the gravy you serve with your pork roast.

Shelf Life & Freezing

The fat from the pork roast drippings can be kept in the fridge for 3-4 days. Possibly longer, depending on the amount of liquid it contains (compared to to pure fat) and how clean the working environment was. Always be sure to check for a "ranzid" smell and mold on top of the spread.

You can freeze the pork roast drippings for 2-3 months. To thaw, leave in the fridge overnight.

What to serve with leftovers of pork roast drippings

You can serve pork roast drippings uncooked as a spread with dark bread and onions or pickles.

But you can also use the drippings to roast potatoes, veggies, etc.

You can also add the drippings to the next gravy to have even more next time ;D.

Anleitung

  • Prepare a pork roast with gravy.
  • After the roast is finished, you put aside some of the fat (grease drops) that swims on top of the gravy.
  • Fill in a container and let cool in the fridge for a few hours.
  • Before using as spread, stir a bit, so that the fat parts get mixed with the liquid parts of the gravy.
