This bread soup is an inexpensive and filling way to use up leftover dry bread.
This quick and easy recipe involves sautéing some onion in fat, then adding the dry bread leftovers and vegetable soup, cooking until soft, and puréeing. This simple, traditional zero-waste recipe tastes especially delicious with fried bacon bits and a dash of whipped cream. Multigrain bread also gives the soup that extra special something.

Ingredients
You will need the following ingredients for the recipe:
- 1 small onion – alternatively, finely chopped leek
- 1-2 tablespoon fat – e.g., butter, lard, or oil
- 1 - 1.5 liter (4-6 cups) vegetable broth or beef soup – depending on how thick you want the soup. You can use whatever soup or broth you have in the kitchen, e.g. store-bought stock cube or homemade soup seasoning, fresh vegetable soup, or beef soup
- 150 g dark bread (stale or fresh) – also tastes good with grain bread
- 1 teaspoon ground caraway seeds
- 1-2 tablespoon parsley
- 1 pinch of pepper
- 1-2 tablespoon finely chopped chives
- optional: 100 g vegetables such as peas, green beans, broccoli, parsley root
- optional: 100 g roasted bacon cubes for serving
- optional: ½ cup heavy cream for serving
Instructions
Here is a detailed step-by-step guide with pictures.
Peel and chop the onion and fry in a little fat until translucent.
Pour in the vegetable soup.
Add pieces of bread. The bread does not need to be cut into cubes.
Add caraway seeds and pepper.
Finely chop the parsley and add it. I like it with a little more parsley.
Optionally, add vegetables of your choice, such as a handful of frozen broccoli or peas.
Simmer for about 15 minutes with the lid on.
In the meantime, fry the bacon cubes in a pan until crispy.
Puree with a hand blender. Season the soup to taste with a little parsley or spices of your choice.
Serve with a dash of whipped cream, the fried bacon, and some finely chopped chives.

Zutaten
- 1 small onion
- 1-2 tablespoons fat e.g., butter, lard, or oil
- 1-1.5 liters vegetable broth or beef broth
- 150 g brown bread stale or fresh
- 1 teaspoon ground caraway seeds
- 1-2 tablespoon parsley
- 1 pinch of pepper
- 1-2 tbsp finely chopped chives for serving
- 100 g vegetables such as peas, green beans, broccoli, parsley root optional
- 100 g roasted bacon cubes optional
- ½ cup heavy cream optional
Anleitung
- Peel and finely chop the onion. Heat the fat in a pot and brown the onion.
- Pour in the vegetable soup.
- Cut the bread into pieces and add to the soup.
- Add the caraway seeds, parsley, and pepper,
- Optionally, add a handful of vegetables of your choice.
- Bring to a boil and cook for about 15 minutes (with lid) until the bread and veggies are soft.
- Blend with a hand blender.
- Optional: Fry the bacon cubes in a pan.
- Serve with bacon, finely chopped chives and 1-2 tbsp. of heavy cream (for each portion).
