Bread Soup Recipe With Roasted Bacon

This Bread Soup is a delicious, inexpensive, and filling way to use up leftover dry bread.

Zutaten

  • 1 small onion
  • 1-2 tablespoons fat e.g., butter, lard, or oil
  • 1-1.5 liters vegetable broth or beef broth
  • 150 g brown bread stale or fresh
  • 1 teaspoon ground caraway seeds
  • 1-2 tablespoon parsley
  • 1 pinch of pepper
  • 1-2 tbsp finely chopped chives for serving
  • 100 g vegetables such as peas, green beans, broccoli, parsley root optional
  • 100 g roasted bacon cubes optional
  • ½ cup heavy cream optional

Anleitung

  • Peel and finely chop the onion. Heat the fat in a pot and brown the onion.
  • Pour in the vegetable soup.
  • Cut the bread into pieces and add to the soup.
  • Add the caraway seeds, parsley, and pepper,
  • Optionally, add a handful of vegetables of your choice.
  • Bring to a boil and cook for about 15 minutes (with lid) until the bread and veggies are soft.
  • Blend with a hand blender.
  • Optional: Fry the bacon cubes in a pan.
  • Serve with bacon, finely chopped chives and 1-2 tbsp. of heavy cream (for each portion).
