Bread Soup Recipe With Roasted Bacon

This Bread Soup is a delicious, inexpensive, and filling way to use up leftover dry bread.

Cooking Time 15 Minuten Min.
- 1 small onion
- 1-2 tablespoons fat e.g., butter, lard, or oil
- 1-1.5 liters vegetable broth or beef broth
- 150 g brown bread stale or fresh
- 1 teaspoon ground caraway seeds
- 1-2 tablespoon parsley
- 1 pinch of pepper
- 1-2 tbsp finely chopped chives for serving
- 100 g vegetables such as peas, green beans, broccoli, parsley root optional
- 100 g roasted bacon cubes optional
- ½ cup heavy cream optional
Peel and finely chop the onion. Heat the fat in a pot and brown the onion.
Pour in the vegetable soup.
Cut the bread into pieces and add to the soup.
Add the caraway seeds, parsley, and pepper,
Optionally, add a handful of vegetables of your choice.
Bring to a boil and cook for about 15 minutes (with lid) until the bread and veggies are soft.
Blend with a hand blender.
Optional: Fry the bacon cubes in a pan.
Serve with bacon, finely chopped chives and 1-2 tbsp. of heavy cream (for each portion).
