Cabbage Salad with Caraway Seeds is a very popular salad in Austria and Germany and can be found at almost every salad buffet and often as part of a mixed salad. Traditionally, it is also served at the Heurigen (traditional wine taverns) and as a side to festive dishes such as roast pork or smoked ham.

In this article you will find a classic version of a simple cold cabbage salad with caraway seeds, apple cider vinegar, oil and a little sugar.

What goes well with Austrian cabbage salad?

In Austria, cabbage salad with caraway seeds is often served with roast pork or smoked meat.

You can also serve coleslaw with other meat dishes such as sausages, steak and the like. All kind of dishes with minced meat (such as burger patties or meat loaf) go also well with this cabbage salad.

Vegetarian or vegan ideas for coleslaw include fried mushrooms, bread dumplings or potato dumplings.

Ingredients

You will need the following ingredients for approx. 4-6 portions of cold coleslaw:

  • 500 g white cabbage (about ½ a head of a bigger cabbage or 1 small head)
  • 1 tablespoon salt
  • ½ cup water
  • 3 tablespoon apple cider vinegar
  • 1 teaspoon caraway seeds
  • oil
  • 2 tablespoon sugar or honey optional

Instructions

Cut the cabbage into fine noodles (very fine strips) and mix with the salt in a bowl. Leave to rest for 1 hour.

Squeeze out the water and drain.

Bring about ½ cup (125ml) of water to the boil with the apple cider vinegar and caraway seeds (and optionally the sugar). Pour over the cabbage and mix well.

Season with oil and a little more vinegar or more sugar, depending on taste.

Neutral oil such as rapeseed oil, sunflower oil or corn oil is usually used, but I also like olive oil.

Cabbage Salad Shelf life

How long does the cabbage salad keep in the fridge? The salad will keep in the fridge for about 3-4 days if it is sealed airtight. I like to use larger screw-top jars for storage.

Tip: whether for a big family celebration or meal prep during the week - the coleslaw can be perfectly prepared thanks to its shelf life in the fridge!
