1large parsnip
1large carrot
1tsp honey
2tbsp apple cider vinegar
2tbsp olive oil
1tsp parsleychopped
Anleitung
Dissolve the honey in the vinegar. Mix with olive oil.
Wash and grate the parsnips and carrots, mix with the dressing. Serve sprinkled with parsley.

If you make more of the dressing and add cooked lentils, you have a quick, budget friendly and healthy lunch. The salad will keep in the fridge for a few days, making it ideal for meal prep.
