Quick & Easy Raw Parsnip Carrot Salad

Quick parsnip and carrot salad with a simple dressing.

Zutaten

  • 1 large parsnip
  • 1 large carrot
  • 1 tsp honey
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tsp parsley chopped

Anleitung

  • Dissolve the honey in the vinegar. Mix with olive oil.
  • Wash and grate the parsnips and carrots, mix with the dressing. Serve sprinkled with parsley.

Notizen

If you make more of the dressing and add cooked lentils, you have a quick, budget friendly and healthy lunch.
The salad will keep in the fridge for a few days, making it ideal for meal prep.
