This leek soup with crispy cheese toast is one of our favorite family recipes!

Zutaten
For the leek soup
1onion
2tablespoonoil
1leek stalk
2tablespoonflour
1lvegetable soup
1dashwhipped cream approx. 70ml
grated nutmeg
pepper
parsley
For the cheese toast
6slicesof white bread
1egg
125mlwhipped cream(½ cup)
pepper
grated nutmeg
150ggrated Emmental cheeseor other cheese, ~ 1 cup
Anleitung
Soup:
Fry the onion in oil. Cut the well-washed leek into thin slices and fry, dust with flour and pour in the vegetable soup. Simmer for 15 minutes. Then add a little whipped cream, season with grated nutmeg and pepper and add finely chopped parsley.
Cheese toast:
Cut each slice of toast diagonally into 4 triangles. Whisk the egg with the whipped cream and season with pepper and nutmeg. Add the grated Emmental cheese (if there is not enough, simply add more cream and cheese).
Spread the mixture on the slices of toast and bake in a preheated oven at 200 degrees for approx. 10 minutes until golden brown.
