Grandma's simple chicken soup

Granny's chicken soup recipe with drumsticks, soup vegetables and salt. Helps with colds and warms you up on cold days. Goes well as a light dinner and main course, or as a starter for a holiday meal.

Zutaten

  • 500 g chicken drumsticks ~ 1 lbs, or any part of chicken including bones, skin and fat
  • 400 g soup greens ~ 0.9 lbs - carrots, yellow turnips, celery root, parsley stalks, parsley root
  • 1 l water ~ 4 cups
  • salt soup seasoning optional
  • chives to garnish
  • vermicelli pasta or other garnish as cubed potatoes, optional

Anleitung

  • Peel the carrots, turnips and parsley root and cut off the ends. Place in a pot with the rest of the soup vegetables and the chicken drumsticks.
  • Cover with water and bring to the boil. Reduce the heat, cover and simmer for 45 minutes.
  • Remove the meat and soup vegetables from the soup.
  • Season the soup with salt and/or soup seasoning to taste.
  • If desired, cook finely diced potatoes or soup noodles in the soup for another 5-10 minutes.
  • In the meantime, remove the meat from the bones and cut into small pieces. Remove the skin from the celery root and cut into small pieces. My grandma serves carrots and turnips whole, but you can also cut into small slices or cubes.
  • Add chicken and soup vegetables back into the pot and serve sprinkled with chives.

Notizen

The result is even better with a whole soup chicken, especially with giblets: use more water so that everything is covered.
Chill the leftover soup as quickly as possible.
Optionally, add a bay leaf, a few juniper berries and some lovage.
