Cabbage Salad with Caraway Seeds

Classic version of a simple Austrian & German cabbage salad with caraway seeds, apple cider vinegar, oil and a little sugar.

white cabbage
about ½ a head

salt

water

tablespoon
apple cider vinegar

teaspoon
caraway seeds
oil
to taste

tablespoon
sugar or honey

Anleitung
Cut the cabbage into very fine strips and mix with the salt in a bowl. Leave to rest for 1 hour.
Squeeze out the water and drain.
Bring about ½ cup of water to the boil with the apple cider vinegar and caraway seeds (and optionally the sugar). Pour over the cabbage and mix well.
Season with oil and a little more vinegar or more sugar, to taste.
Notizen
Neutral oil such as rapeseed oil, sunflower oil or corn oil is usually used, but I also like olive oil.
