Austrian Mohnnudeln (Sweet Poppy Seed Pasta)

Mohnnudeln are a typical Ausrian (and Bohemian) specialty and are eaten as dessert or main course. This recipe comes with detailled instructions and tipps for making them from scratch.

Zutaten

For the dough

  • 400 g floury potatoes
  • 125 g pastry flour
  • 25 g unsalted butter
  • 1 egg yolk
  • pinch salt

For everything else

  • 80 g unsalted butter
  • 200 g poppy seeds
  • 100 g powder sugar

Anleitung

  • Cook potatoes one day ahead. Peel and press the potatoes until a fine mass without chunks.
  • Take the butter out of the fridge a few hours before kneading the dough. It should be at room temperature
  • In a bowl, mix all ingredients for the dough. (I prefer to mix them with my hands) To make a noodle, take about 1 spoonfull of dough and roll it with one hand. (see video in posting)
  • Put noodles into boiling water and let simmer on medium temperature for 10 minutes. When cooked, they'll swim on top. Sieve well.
  • In a frying pan, melt the rest of the butter. Add the noodles and mix well. Add the poppy seeds. Before serving, sprinkle with powdered sugar.
